Farmers have retired their breeding cattle to pasture, where they may graze exclusively on grass.
These roamers are allowed to mature in a more natural setting and are not processed until they are at least 60 months old, which is more than twice the age of conventional cattle.
The meat has a deep, developed grass-fed flavour, as well as excellent marbling, due to the older cows.
